You don’t need any experience with knife sharpening. Quite the opposite. The sharpener is designed for beginners. The E2-I sharpener easily handles not only knives with a plain edge but also with a serrated edge. You can sharpen cleavers, fillet knives, and even scissors.
It has 2 sharpening zones, one for each edge. Thanks to the guiding system you don’t need any sharpening experience. You just switch the sharpener on and alternately pull the left and right edge of the blade through the sharpener. Simply rest the knife against the guide support, which ensures you sharpen it at the correct angle.
The sharpener has 3 modes: Shape, Sharpen and Refine. Shape is for sharpening very dull knives; you could say it gives the knife its “shape”. The Sharpen program restores the basic sharpness of the edge. Refine then finishes the knives to the highest possible quality. Turning on, turning off and switching between programs is controlled by a single button. The sharpener also includes a self-cleaning mechanism that draws in steel dust.
