You don’t need any prior experience with knife sharpening. Quite the opposite. The sharpener is designed for beginners. The E2Plus-I sharpener easily handles not only knives with a plain edge but also serrated edges. You can sharpen cleavers, fillet knives, and even scissors. Compared to the E2-I version, it can also handle pocket knives.
It has 3 sharpening zones. Two for the left and right edge of the blade, and a third in the middle of the sharpener for finishing the edge. Thanks to the guide system you don’t need any experience with knife sharpening. You simply switch on the sharpener and alternately draw the left and right edge of the blade through the sharpener. You just rest the knife against the guide support. This ensures you sharpen it at the correct angle. To finish sharpening kitchen knives, you need to draw the knife through the sharpening section in the middle of the sharpener. For pocket knives the process is the same, you just need to replace the top part of the sharpener.
The sharpener has 2 modes, Shape and Sharp. Shape is for sharpening very dull knives; you could say it gives the knife its “shape”. The Sharp program then restores the knife’s cutting edge. To switch between programs, simply press the corresponding button.
